Bacon, Spinach, Avocado and Tomato Sandwich with Goat Cheese
I believe there is something really satisfying about a good sandwich. Any time of year, any time of day or night, there are times when a sandwich is just the thing.
I have heard people say they don’t like sandwiches and I wonder if their school lunches consisted of bad sandwiches: dubious bread with three slices of baloney stacked over questionable mayo.
I tell them that they really need to try a good sandwich — such as a Rueben on whole wheat bread with sauerkraut and melted Swiss cheese or chicken salad with curry, a Sloppy Joe or a French dip sandwich.
Anyways, I was thinking about a BLT sandwich last week that I haven’t had in a long time.
So I made a sort-of-BLT with what I had in the fridge.
It came out great, so great I thought it actually deserves a post on this blog.

Lettuce is replaced with cooked spinach and there’s a little goat cheese to make everything better.
This sandwich is anything but mundane. It packs a serious flavor punch and will keep you full and satisfied.
To be honest it feels like something between a grilled cheese and a BLT. Probably more like a BLT. What matters is that it’s delicious in its own right.

Ingredients
Makes 2 sandwiches
6 slices of bacon
½ avocado, peeled, pitted and sliced
3 cups of spinach
1 medium tomato sliced
2 tablespoons soft goat cheese
4 slices of your favorite bread (I used whole wheat)
Directions
Preheat oven to 425°F (215°C) and place a rack in the middle. Spread bacon slices on a rimmed baking sheet and bake for 15 minute.
Alternatively cook in a skillet over medium heat; turning the strips as needed until they reach the desired crispness, 8 to 12 minutes.
In the meantime, heat 1 teaspoon of olive oil in a skillet over medium heat, add spinach and sautè until it starts to wilt, about 6 to 8 minutes.
Toast bread to your liking, then spread cheese on slices and layer with avocado, spinach, tomato and bacon. Making two sandwiches.
Press sandwiches to compact slightly and enjoy!
