Lucky for me, this baked Cheesy Hot Corn Dip deliciously combines all these wonderful loves!
This recipe is from a friend of mine, who served it at her 40th birthday party. Let me just say, it was the hit of the party. (Aside from the guest-of-honor herself, of course.) And it's no wonder why. This warm baked dip is so, so good.
The sweetness of the corn combines so well with the creaminess of the warm cheesy base and the little jolt of spice from diced jalapeno. Served up with tortilla chips or crackers for dipping, it's a perfect dip to pair with watching the big game ... or in my friend's case, to pair with your birthday party.
But what could be better than this being a tasty hit-of-the-party kind of dip? This being a tasty hit-of-the-party kind of dip that is super easy to whip up, too.
Mix the corn with a good dose of grated cheese, mayonnaise, and some chopped jalapeno ... just to give it a little bit of spicy attitude.
Then spoon the mixture into a baking dish and bake it up.
After the cheesy yumminess is all baked up, dig in ... with pita chips, tortilla chips, corn chips or plain-type crackers. Whatever fits your fancy.
Believe me, this Cheesy Hot Corn Dip is so good, you may want to go ahead and make a double batch. I'm just sayin' ...

Cheesy Hot Corn Dip

ingredients:
- 1 (11 oz.) can Mexican corn, drained
- 1 c. shredded Monterrey Jack cheese
- 1/2 c. shredded Parmesan cheese
- 1 c. mayonnaise
- 2 or 3 slices jalapeno diced, to taste (fresh or pickled)
instructions:
How to cook Cheesy Hot Corn Dip
- Combine all ingredients in a mixing bowl, stirring until well mixed. Spoon into a lightly greased baking dish.
- Bake at 350 degrees until bubbly and beginning to brown on top, approximately 30 minutes.
- Serve with tortilla chips, corn chips, pita chips, or crackers.
