Chewy Oatmeal Raisinet Cookies
Change up those traditional oatmeal raisin cookies and make chewy Oatmeal Raisinet Cookies instead! Because when you use Raisinets, you get all the tasty chewiness of raisins with the added bonus of a little chocolate. And can't we all use a bonus of a little chocolate?
I've been enjoying a lot of oatmeal lately, trying to incorporate more fiber and whole grains into my eating. Unfortunately, I hate oatmeal.
I hate the mushy type of oatmeal, that is. So I've been taking my oatmeal in the form of granola, which I love.
Well, today I decided to take my oatmeal in even another form - in the form of these tasty Oatmeal Raisinet Cookies.
Oatmeal cookies still count as oatmeal, right? Hey, in my book even if it's surrounded by brown sugar and Raisinets, it's still oatmeal! It's still fiber and whole grains. That's my story, and I'm sticking to it.
Ohhhhhhh, and it's darn good oatmeal, too.
Using 2 tablespoons of dough per cookie instead of the typical 1 tablespoon scoop of most drop cookies, these cookies bake up nice and chewy. Of course if you prefer a crisper cookie, simply increase the baking time just a bit to achieve a crunchier texture.
Personally, I love a chewy cookie. And love that, with their generous scoop of dough, these come out just a little bit on the larger side.
Now you certainly could use regular raisins in this recipe, and have quite the tasty oatmeal raisin cookie.
But when you use Raisinets instead of just plain old raisins, you get all the tasty chewiness of raisins with the added bonus of a little chocolate. And can't we all use a bonus of a little chocolate? I think we can. Oh, yes indeed, I think we can.
Yield: about 18 to 20 large cookies

ingredients:
- 3/4 c. (1 ½ sticks) unsalted butter, softened
- 1/2 c. granulated sugar
- 1 c. brown sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 ½ c. all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 3 c. old-fashioned oats
- 1 ½ c. (8 oz. package) Raisinets {chocolate covered raisins}
instructions:
How to cook Chewy Oatmeal Raisinet Cookies
- Beat butter with an electric mixer at medium speed until creamy, about 1 to 2 minutes. Add granulated sugar and brown sugar; beat well until fluffy, about 2 to 3 minutes. Add eggs and vanilla extract; beat until well combined.
- In a separate bowl, combine flour, baking soda, baking powder, and salt. Add to butter mixture and beat until just combined.
- Gently stir in oats by hand until just combined; then stir in Raisinets.
- Use your hands to roll 2 tablespoons dough into a ball. Place on baking sheet and gently press down with the palm of your hand to flatten the dough ball just slightly.
- Repeat with remaining dough, spacing dough balls about 2 ½” apart on the baking sheet {so you’ll only get about 8 or 9 on the baking sheet at a time}.
- Bake at 350℉ for 13 - 14 minutes, or until golden brown and set on the edges but still doughy looking in the middles.
- Let cool on the baking sheet for about 2 minutes, then place on a wire rack to cool completely.
TRACEY'S NOTES
- Bake as directed above for chewy cookies. For crisper cookies, bake for up to 17 minutes until middles are set and golden brown.
