Easy Baked Garlic Mushrooms
Let’s start with what matters most: this is absolutely my favorite quick and delicious way to prepare ‘shrooms.
It’s an incredible, quick, easy side dish that’s ready in less than 30 minutes and that it’s so delicious it will outshine the main dish — unless the main dish is Spicy Basil Lemon Chicken, then we might call it a draw.
These Easy Baked Butter Garlic Mushrooms will make you drool in a way that only butter and garlic can, well that and sweet potato fries, chocolate chunk cookies, pulled pork, and quesadillas. Just to name a few.
It’s seriously the one side side I keep making again and again.
Truth to be told, awesome side dishes are tough to come by. The usual suspects include: mashed potatoes and gravy, thick cut fries, corn on the cob, potato salad, coleslaw, baked beans, etc.
OK, maybe there are a lot of great side dishes, but often they take a little bit of fuss that I don’t want to deal with.
Otherwise, the common side dish is a boring green salad that is everything but exciting. Side salad, I love you, but sometimes I want something else.
Familiar little white button mushrooms.
Ubiquitous but (at least to me) tasty button ‘shrooms, that have fallen a bit out of fashion these days due to the popularity of more exotic varieties like porcini, shiitake, or the very fancy chanterelles.
While it’s certainly more glamorous to use wilder mushrooms, I believe that white button mushrooms still deserve to play an important role in our kitchens.
They’re inexpensive, readily available, and can produce an outstanding side dish.
Ordinary white button mushrooms are mixed with butter, garlic, balsamic vinegar, oregano, and basil then roasted in the oven until tender and slightly crisp on top.
These are addicting in a way that only garlic-butter flavored foods can be. They’re a category all on their own. Delicious.

Ingredients
Serves 6
1 lb / 453 gr white button mushrooms, scrubbed and stems trimmed
4 tablespoons balsamic vinegar
2 tablespoons butter, melted
3 garlic cloves, crushed
½ teaspoon dried oregano
½ teaspoon dried dried basil
1 teaspoon fine grain sea salt
¼ teaspoon ground black pepper
Chopped fresh parsley to garnish
Directions
Preheat oven to 425ºF (215ºC) and place a rack in the middle.
Lightly grease a baking sheet and set aside.
In a large bowl, whisk balsamic vinegar, butter, crushed garlic, oregano, basil, salt, and pepper. Stir in mushrooms and let sit for at least 15 minutes.
Spread mushrooms onto the prepared baking sheet.
Place in the oven and roast for about 15 to 20 minutes, until tender.
Sprinkle with chopped parsley and serve.
