healthy baked chicken nuggets
Happy New Year! We rang in the new year by being completely boring :). We whipped up a few quick appetizers for dinner (including these awesome pretzel bites!), watched a movie with the kids, and went to bed at 10:00. Somehow I just never get very excited about New Year's Eve anymore, but I do love New Year's Day. I like the chance to reevaluate my priorities and make goals and wishes for the new year. Among other goals, this year I want to work on feeding my kids healthier food. We've developed the bad habit this last year of picking up kids meals or convenience foods when we're short on time, and I want that to stop. I think fast food is fine occasionally, but I'm tired of my kids expecting me to stop every time we drive past a fast food restaurant. :) With Abby especially, the food she eats really affects how she feels and thinks and acts, and I want her to be getting the best nutrition possible.
These baked chicken nuggets are super kid-friendly, and totally delicious! My girls both love them, and think they're just as yummy as the kind they get in their kids meals. I often make a big batch of them and keep some in the fridge or freezer for quick lunches. The girls like to dip them in ranch or just eat them plain. Geoff and I like to toss them in barbecue or buffalo sauce and eat them that way (yum!). Either way, they're delicious!
Healthy Baked Chicken Nuggets
adapted from Skinny Taste
2 large chicken breasts, trimmed and cut into chunks
1 teaspoon olive oil
salt and pepper
1/2 cup whole wheat breadcrumbs
1/4 cup panko breadcrumbs
1 tablespoon parmesan cheese
olive oil cooking spray
Preheat oven to 425. Line a 9 x 13 baking sheet with foil. Toss chicken with olive oil and sprinkle with salt and pepper. In a shallow dish or plate, mix together breadcrumbs, panko, and parmesan. Place the chicken pieces in the breadcrumb mixture, and toss to coat. Place in a single layer on the prepared baking sheet, and spray with cooking spray. Bake 15-20 minutes, or until cooked through. (If you want the nuggets to be more evenly browned, turn them halfway through cooking.)
