This one's pretty simple, folks ... If you like orange, you'll love these Orange-Coconut Balls. Not a fan of orange? Then these aren't for you. It's as simple as that. Because these little babies? ... They pack a huge orange punch!
This recipe comes to me by way of my mother-in-law. Back before was even a thought, I put together a family cookbook compiling all our families' favorite recipes from fancy to plain-Jane, celebration food to every-day dinners that grace our tables probably more frequently than they should.
In all, the cookbook is a collection of 534 family favorite recipes. And I'm slowly-but-surely working my way through cooking each and every one.
When I first created the cookbook in 2010, I had personally made 282 of the recipes. And now as of April 2016? I've made 356 of them ... for an increase of 74 made over the past 6 years. Hmmmm ... at this rate, it's going to take me about 15 more years to finish making them all!
I better pick up the pace.
Anyway, these Orange-Coconut Balls are one of the recipes that grace the pages of our family cookbook.
Orange-Coconut Balls get their sunny orange flavor from frozen orange juice concentrate. In similar fashion to how I make my Rum Balls with Spiced Rum (another family favorite!), the orange juice concentrate is combined with a mixture of vanilla wafer crumbs, confectioners' sugar, and finely chopped nuts ... which all then gets rolled into little bite-sized balls of orange deliciousness.
Which are then coated in the sweet yumminess of coconut.
And orange lovers, what could be better than that?

Orange-Coconut Balls
Orange lovers Coconut-Orange Balls are for you! Because these little bite-sized beauties pack a huge orange punch.

ingredients:
- 3 c. vanilla wafer crumbs {a 12 oz. box, crushed ... a food processor makes quick work of the crushing!}
- 1 1/2 c. finely chopped pecans or walnuts
- 3/4 c. (6 oz.) frozen orange juice concentrate, thawed
- 4 c. confectioners sugar {1 lb.}
- 2 T. butter, melted
- red & yellow food coloring {optional}
- Approximately 2 c. shredded coconut
instructions:
How to cook Orange-Coconut Balls
- In a large mixing bowl, combine vanilla wafer crumbs, nuts, confectioners sugar, orange juice concentrate, and melted butter. Mix until well combined.*
- Roll into small balls, approximately 1-inch in diameter. Immediately roll each ball in coconut.
- Place in an airtight container and chill.
TRACEY'S NOTES
- *If using food coloring, add about 3 drops red food coloring and 5 drops yellow food coloring to the mixture ... or, the amount needed to reach your desired color of orange.
