(Paleo) Brownie Bites
I made these Brownie Bites last night.
Why? Because I wanted chocolate.
Where? In my kitchen.
And you know what? They are awesome!
You know those brownie bites you get in bulk at the warehouse store? These are better. Waaaay better.
Plus, they’re healthier.
Waaaay healthier.
And so easy to make.
It literally takes 5 minutes to make plus baking time.
These (Paleo) Brownie Bites are decadently rich and perfectly satisfying.
They will satisfy all of your sweet-tooth cravings without the guilt.
It’s not like you’re going to eat a dozen of them in one sitting, am I right?
These moisty, fudgy bites of brownie are sure to be a hit with everyone.
You can just leave them plain, of course, or frost them or top them with candy or do like I did and simply dust them with powdered coconut sugar.
Do play around, these are so much fun!

Ingredients
Makes 24 bites
1 cup almond flour
½ cup cocoa powder
¼ teaspoon baking soda
Pinch of fine grain salt
½ cup coconut oil, melted
½ cup maple syrup or mild-tasting honey (alternatively you can use ½ teaspoon liquid stevia with ⅓ cup water)
3 eggs, at room temperature
1 teaspoon vanilla extract
Directions
Preheat oven to 350°F (175°C) and place a rack in the middle.
Generously grease two mini-muffin pans with melted coconut oil and set aside.
In a medium bowl mix together almond flour, cocoa powder, baking soda, and salt. Set aside.
In another bowl beat the eggs. Add melted coconut oil, maple syrup, and vanilla extract and mix until combined.
Pour wet ingredients over dry ingredients and mix until fully incorporated.
Scoop mixture into the mini muffin pans. Bake for 15 minutes or until a toothpick comes out dry when inserted in the center.
Let cool in pan for about 10 minutes before removing.
The bites should come out easily, if not take a knife and carefully guide it around the edge and pop them out.
Let cool completely.
Store in an airtight container for up to 3 days. These store very well in the fridge and freezer.
