It's Cinco de Mayo celebration time!
Yes, I can hardly believe May is here ... but here it sure is. And isn't it great that May starts off with giving us a wonderful reason to celebrate? Not that I need a reason to enjoy a big ol' pitcher of margaritas or host a fun-filled Mexican fiesta dinner ... but Cinco de Mayo sure provides a reason for a fun celebration if we're in need of a reason to encourage us along!
So in honor of this special day, I thought it would be fun to share my favorite way to celebrate the day. Well actually, my favorite five ways to celebrate the day, that is.
Yes, I like to celebrate Cinco de Mayo by enjoying a nice, cold champagne margarita alongside a platter-full of my five favorite salsas.
That's right, nothing beats some great salsas for dipping! And why make just one salsa to enjoy when we can celebrate Cinco de Mayo with five salsas?? Cinco de Mayo is the 5th of May, after all.
I created this peachy salsa after my husband and I had gone peach picking one afternoon. I remembered seeing a jar of peach-pineapple salsa on the shelf during one of my grocery shopping trips, and had thought it sounded like a fabulous flavor combination. With that inspiration in mind, I set about whipping up my own version with our freshly-picked peaches.
And may I just say ... WOW! ... do we ever love this salsa. To us, it's just the right balance of sweet and spicy ... perfect spooned over chicken or fish, or just-as-it-is in a bowl for dipping.
Now sure, I could serve up all this salsa deliciousness with a bag of chips. But do you know what's a whole lot more fun for hearty salsa dippin'? Serving up a selection of tasty and satisfying José Olé snacks alongside our salsas!
I just love the great taste and sturdiness of José Olé snacks, which makes them the perfect dippers for scooping up my favorite hefty fruit-filled and chunky salsas.

And I must say, the Peach-Pineapple Salsa pairs especially wonderfully with the Chicken & Cheese Nacho Bites! I just love how the sweet-and-spiciness of the salsa combines with the flavor of the Nacho Bites' savory chicken filling.
Look for José Olé snacks in the freezer aisle at your local grocery store, and just pop them in the oven or microwave to create a conveniently easy, hearty, and satisfying party platter ... with or without a selection of salsas for fun-and-tasty dipping.
As for me? I'll be celebrating Cinco de Mayo salsa-style by mixing up big bowls of homemade salsa, grabbing that pitcher of margaritas, and serving up a fun-filled Mexican fiesta salsa platter.
Complete with our favorite sweet-and-spicy Peach-Pineapple Salsa taking a place of honor in the center of the platter.
Ingredients
- 2 c. chopped fresh pineapple
- 2 c. chopped fresh peaches, peeled
- 1 small jalapeno pepper, seeded & ribs removed*
- 1/2 of a medium red onion
- 1 medium red bell pepper
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 2 medium limes
- 3/4 c. chopped fresh cilantro
- Finely chop pineapple, peaches, jalapeno, red onion, and red bell pepper. Combine in a mixing bowl. Add cumin, salt, and cilantro; toss. Add the juice from the limes; toss to coat.
- chill for about 30 minutes before serving. Serve with José Olé snacks, tortilla chips, or pita chips for dipping.
*Remove jalapeno seeds and ribs for a 'medium' salsa. For more heat, leave in some of the seeds. I remove the seeds and ribs from 1/2 of the jalapeno and leave them in the other half, which results in a pretty spicy salsa.
