Summertime is upon us! And along with summertime comes all kinds of wonderful get-togethers with family and friends. There never seems to be a shortage of fun times in the summertime.
No matter what the type of summer event, one of my favorite things to whip up for entertaining is this classic Pineapple Cheese Ball.
Loaded with great flavor from its tasty combination of crushed pineapple, fresh green pepper, and finely chopped onion, this cheese ball is always a favorite.
Whether toted in a picnic basket to an outdoor concert, shared at a potluck cookout, or served up with crackers for poolside snacking, this cheese ball never fails to please.

Now, whipping up this cheese ball for the pool party was almost as easy as grabbing all my ingredients at Food Lion.
The key to trouble-free prep is to make sure the cream cheese is softened to room temperature. This makes it so easy to mix all the ingredients together and ensures there are no cream cheese lumps.
Simply combine the softened cream cheese, well-drained crushed pineapple, finely chopped onion, green pepper, a touch of salt, and some chopped walnuts until well mixed. Then spoon this cream cheese mixture onto a sheet of plastic wrap, wrapping it up and shaping the mixture into a ball.
The key is to make sure the cream cheese is softened to room temperature. This makes it so easy to mix all the ingredients together and ensure there are no cream cheese lumps.
Place the ball in the freezer for about 10 minutes to firm it up a bit.
If you need to, press the nuts down gently with your hand to get them to adhere to the outside of the cheese ball.
Then cover the finished cheese ball and refrigerate it overnight to let the flavors meld together.
Once those flavors meld together, this Pineapple Cheese Ball is pure deliciousness.
It's got a slight sweetness from the pineapple, creaminess from the cream cheese, a savory note from the onion and green pepper, and wonderful crunch from the chopped walnuts.

ingredients:
- 2 (8 oz.) packages cream cheese, at room temperature
- 1 (8 oz.) can crushed pineapple, well-drained
- 1/4 c. finely chopped green pepper
- 1 T. finely chopped onion
- 1/2 tsp. salt
- 1 c. finely chopped walnuts, divided
instructions:
How to cook PINEAPPLE CHEESE BALL
- In a bowl, mix together cream cheese, well-drained pineapple, green pepper, onion, salt, and ½ cup chopped walnuts until well combined.
- Spoon cream cheese mixture onto a sheet of plastic wrap. Wrap in the plastic wrap and shape into a ball. Place in the freezer for 10 minutes.
- Remove from freezer, unwrap, and roll in remaining ½ cup chopped walnuts. Press nuts down gently, if needed, to adhere to the outside of the cheeseball.
- Cover. Refrigerate over night to allow flavors to meld.
- Serve with crackers.
