Pizzadilla (aka Quesadilla Pizza)
Let’s get this out of the way. My name is Mike, and I’m addicted to reddit.
There, I said it.
I spend a lot of time on reddit, probably more than I should, but it’s definitely one of the first things that I check in the morning.
It feeds my need for novelty as it’s always filled with new information and pictures. Perfect.Addiction.Material.
If you don’t know much about it or have been puzzled by the site if you’ve ever tried to check it out, let me explain you briefly what it’s about.
Reddit is an entertainment/social/news site where users can submit content, from text post, to direct links, photos, gifs, music or just anything else.
Unlike Pinterest, Facebook, Twitter, reddit is an open network — in that you don’t have to be friends or have followers to see content or for others to see what you're doing.
Reddit is an unflinching democracy, where you can post/do/say (almost) anything you want. Making it a happy abode for all who enter.
Users can upvote or downvote content. The most frequently upvoted content gets to the top of the page, while content that’s ignored or downvoted isn’t likely to be seen by anyone.
Reddit is not one website, it’s actually made up of thousands of “subreddits” each for a specific topic (funny, showerthoughts, TIL, YOLO, Aww, News, Food, et cetera…)
Each subreddit is a community with its own focus, moderators, rules and users.
I know it sounds technical and uber complicated, but it’s really simple. Trust me.
One final thing, reddit is ugly.
It’s nothing like Facebook or Pinterest and their super pretty user interfaces. Reddit doesn’t give a d*!n about appearances, it’s all about content.
The website resembles one those very early chat rooms and bulletin boards. Which I think it’s the reason why some people don't find it appealing.
But the upside to understanding reddit is huge, transformative, even magical.
There’s so much cool stuff on it: videos, articles, gifs that may go viral any minute now.
There are experts/enthusiasts in nearly any topic/field, you can discuss with.
Reddit is a tornado of content, which just as with everything on the internet can also be trivial or just downright stupid.
But it’s also everything you could ever want.
It’s like a superpower. It can be used for good or evil, but when used for the better good...it's incredible what you can find on there!
While on Reddit last week, I found the recipe/idea for this Pizzadilla (or quesadilla pizza).
It’s basically a quesadilla filled with pizza toppings and topped with even more pizza toppings. I don’t know about you but I think this is GENIUS.
First off it’s stupid easy, I can’t tell you how easy it is (well, actually I can, read the recipe. Ha!)
And quick; it literally takes 10 minutes to prep and cook.
Not to mention how delicious it is. Like so legit.
I’m sure this recipe will fast become a family favorite, and you can customize it to your tastes by adding whatever you like.
I, for instance, made it using cauliflower crust tortillas - because you know how I like me cauliflower crust - and topped it with spicy chorizo.
It was such a big hit.
It's fingerlicking good.

Pizzadilla (aka Quesadilla Pizza) Print this recipe!

Makes one pizzadilla, enough for one
Olive oil
2 large tortillas (to make cauliflower tortillas use this recipe)
½ cup / 4.4 oz / 125 gr marinara sauce store-bought or homemade
½ cup / 1.7 oz / 50 gr low moisture shredded mozzarella cheese
2 tablespoons grated Parmesan cheese, divided
Additional toppings, as desired
Directions
Preheat broiler to high and place a rack in the middle.
In a large skillet heat ½ teaspoon of olive oil over medium heat until it sizzles.
Reduce the heat to low and lay a tortilla in the skillet, then build the pizzadilla by spreading half of the marinara sauce over the tortilla. Sprinkle half of the mozzarella evenly over the tomato sauce.
Place second tortilla on top.
Cook, swirling pan occasionally, until crisp on the bottom, about 2 to 3 minutes.
Carefully flip with a large spatula.
Spread remaining sauce evenly over tortilla.
Sprinkle remaining mozzarella and Parmesan evenly over tortilla and add topping as desired.
Place skillet under the broiler until cheese is melted and starting to brown in spots, about 2 to 3 minutes.
Remove from the oven and sprinkle with remaining Parmesan cheese.
Slide pizzadilla onto a cutting board, cut into wedges and serve immediately.
