Do you remember the ice cream trucks that used to drive through neighborhoods in summertime, selling all kinds of fabulous beloved ice cream treats?
I sure do! Ours didn't play music like some of the ones still around today do. No, ours rang a little bell. And I would get so excited when I heard that bell ringing from a street away.
As soon as I heard that bell, I would beg Mom or Dad for money. And when they obliged, I'd dash out to the end of our driveway to eagerly await the little white truck with all the wonderful treats tucked away inside.

And you know what? I would always, always, always buy the same thing
An Italian Ice.
I just couldn't wait to dig into the icy deliciousness with that cute little wooden spoon the ice cream truck driver gave you along with it. And I would savor every single cold-&-tasty bite.
Well, I've now taken that favorite childhood delight and turned it into a fun and festive grown-up treat - these Red, White & Blue Italian Ice Champagne Floats!
I mean, why should kids have all the Italian ice fun, right?
But don't worry - for those little ones, there's a kid-friendly version, too ... made with Sprite or 7-Up instead of champagne ...
Creating Red, White & Blue Italian Ice Champagne Floats is really super easy to do. {Yay!}
Just start by getting some packaged Italian ice. Any flavor Italian ice will work. But to make festive red, white, and blue floats for the 4th of July, I used:
- Red = cherry, strawberry, or watermelon flavored
- White = lemon flavored
- Blue = blue raspberry flavored
Then use a small cookie scoop {or melon baller} to scoop small balls of Italian ice. You can scoop straight out of the container.
Keep bowls of scooped Italian ice in the freezer, lightly covered with plastic wrap, until ready to serve. They'll be okay hanging out in there for up to a few hours.
Then fill the remainder of each glass with chilled champagne for the grown-up version ... or with 7-Up or Sprite for the kid version.
Serve with red, white, and blue drink stirrers or a straw for stirring around and breaking up all that yummy Italian ice.

Ingredients
- Red Italian Ice {watermelon, cherry, or strawberry flavored}
- White Italian Ice {lemon flavored}
- Blue Italian Ice {blue raspberry flavored}
- Champagne or other sparkling wine {sweeter types such as sec or demi-sec Champagne or sparkling Moscato are recommended} OR Sprite or 7-Up soda
- Using a small cookie scoop or melon baller, scoop Italian ice into small balls. Place 3 or 4 Italian ice balls in a champagne flute or other 8-ounce glass. {I used plastic champagne flutes and plastic 8-ounce cups for drinking outdoors.}
- Fill remainder of glass with champagne/sparkling wine or soda.
- Serve immediately with red, white, & blue drink stirrers or a straw for stirring the float & breaking up the Italian ice.
Notes:
I found each 6-ounce container of Italian ice to yield 7 or 8 scoops, or enough for 2 to 2 1/2 floats.
Once scooped, the Italian ice holds its shape pretty well. Lightly covered in plastic wrap, the scooped balls can "hold" in the freezer for several hours ... so they can be scooped a bit in advance, if you'd like. Also, once placed in glasses, the Italian ice balls hold their shape {indoors ... I didn't test outdoors} for about 20 minutes.
I've tried different types of sparkling wines, and found sweeter types go best with the sweetness of the Italian ice. Dry Champagnes or Proseccos tasted a bit "bitter" against the Italian ice's sweetness.
