Yes, with three kinds of chocolate stuffed in them, how could a chocolate lover {like me!} not love them? They get their triple chocolate yumminess from the trio of cocoa powder, semi-sweet chocolate chips, and milk chocolate chips.
But if you'd rather have Double Chocolate Oatmeal Cookies instead, you could simply use all semi-sweet chocolate chips, or all milk chocolate chips. Quite frequently I make them the double chocolate way, just because I'm using what's already in the pantry {also known as ... I'm too lazy to make a run to the grocery store to get whatever "flavor" of chocolate chips I'm out of}.
The texture of these cookies is soft and chewy, with a little bit of texture from the oats.
To ensure their softness, scoop them a little bit on the large side when you're prepping them for the baking sheet. I use a 1 1/2 tablespoon cookie scoop and let the dough generously spill out over the top and around the edges. Also, be sure to not overbake them. I actually take my cookies out of the oven when they're still a touch on the underbaked side.

- 1 1/4 c. all-purpose flour
- 1/2 c. cocoa
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. butter, softened (2 sticks)
- 1 c. firmly packed brown sugar
- 1/2 c. granulated sugar
- 1 tsp. vanilla extract
- 2 eggs
- 2 c. old-fashioned oats
- 1 c. semi-sweet chocolate chips
- 1 c. milk chocolate chips
instructions:
How to cook Triple Chocolate Oatmeal Cookies
- In a small bowl, combine flour, cocoa, baking soda, and salt; set aside.
- In a larger mixing bowl, combine the butter, brown sugar, granulated sugar, and vanilla extract. Beat at medium speed until creamy, about 2 minutes. Add eggs, one at a time, beating well after each addition. Gradually beat in the flour mixture.
- Stir in the oats, and then the chocolate chips. Drop by heaping teaspoonfuls onto ungreased baking sheets.
- Bake at 350 degrees for 9-11 minutes (they will still look a bit uncooked in the middle). Let stand on the baking sheet for 2 minutes before removing from the pan.
