Zucchini Pizza Boats
Usually pizza is the first thing that gets tossed out of the window the moment somebody starts eating healthy.
That’s why there are so many healthier alternatives to pizza around. Such as cauliflower crust pizza, eggplant pizzas, quesadilla pizza or my all time favorite pizza sweet potato skins.
These Zucchini Pizza Boats are another gem that you absolutely need to try.
Fresh zucchini topped with olive oil, garlic, marinara sauce, mozzarella cheese, Parmesan cheese, and your fave toppings.
It makes for a perfect pizza without all the carbs and the calories.
Am I allowed to say “Good stuff”? As in, really awesome delicious stuff?
Because that’s what these Zucchini Pizza Boats are: good stuff. Period.
These are great if you are on paleo or low-carb diet or simply just trying to eat healthier or if you want to eat something delicious that won’t make you feel stuffed like a Thanksgiving turkey.

Ingredients
Makes 12 zucchini boats
6 small zucchini
1 tablespoon olive oil
1 garlic clove, minced
1 teaspoon salt
Ground black pepper to taste
1 cup marinara sauce (make your own marinara with this recipe)
1 cup shredded mozzarella cheese
4 tablespoons grated Parmesan cheese
Fresh or dried oregano to taste
Your favorite toppings (pepperoni, sausage, mushrooms, ham, chicken, etc.)
Directions
Preheat oven to 400°F (200°C) and place a rack in the middle. Line a baking sheet with parchment paper. Set aside.
Cut zucchini into half lengthwise and scrape out the pulp with a spoon. Trim a thin portion from the bottom of each zucchini so that they can lie flat.
Align zucchini boats on the lined baking sheet (cut portion up) and pat the insides with paper towels.
In a small bowl combine olive oil and minced garlic. Brush the zucchini boats with the garlic oil and sprinkle with salt and pepper.
Fill each zucchini boat with about 1 tablespoon of marinara sauce making sure to leave a small rim near the edges uncoated.
Sprinkle evenly with mozzarella cheese and then with Parmesan cheese. Top with your favorite toppings (place toppings closer to the center of each boat as the mozzarella cheese with melt and spread.)
Bake for 15 to 18 minutes (baking time will vary depending how thick your zucchini are)
Remove from the oven, sprinkle with oregano, and serve.
