Aside from chocolate, chai spice is my favorite flavor. It's such a wonderfully warm, rich, and flavorful spice mix. And believe me, I'm always open to sitting down with a big, creamy chai tea latte.
If you're not familiar with it, chai spice is generally a full-flavored mix of vanilla, cinnamon, allspice, and that extra-special spice that gives it its distinctly characteristic flavor -- cardamom. When you smell chai spice, you'll get a peppery-floral whiff in the scent. That peppery-floral whiff? -- That's the cardamom. And there's just absolutely nothing else like it.

I just adore the taste and smell of chai sugar cookies, chai granola, and just about any other chai form that can be dreamed up.
So, today I decided to share the recipe for my second favorite way to enjoy the fabulous flavors of chai other than the deliciously spiced drink itself -- these Chai-Spiced Mixed Nuts.
I can't say enough that these mixed nuts are delicious. They're a perfect nibble for parties, game day, or everyday snacking. And would be great as little holiday gifts-from-the-kitchen, too.
To make a batch, you start by simply whisking up an egg white along with a tablespoon of vanilla extract.
Toss the frothy egg white mixture with 3 cups of mixed nuts. In this batch, I used a combination of whole almonds, walnuts, and pecans.
The egg white moistens the nuts, giving the flavorful chai spice mixture (sprinkled on in the next steps) something to cling onto. It also distributes the vanilla flavor of the extract all over the nuts, coating each nut with a nice thin film of vanilla.

Then combine granulated sugar with ground cardamom, cinnamon, allspice, and a little kosher salt to create the chai spice mixture used to flavor the nuts.
Be sure to use kosher salt, not regular table salt, as kosher salt is more flaky and less "salty" than regular table salt. If you substitute the same amount of table salt, the finished nuts will taste way too salty.
Sprinkle the sugar and spice mixture on the nuts and give them a good toss. Be sure to get everything good and coated with the chai spice.
Spread the spiced nuts in a single layer on a baking sheet.
I line the baking sheet with parchment paper or foil to make clean up easier.
Then bake the nuts up. As the egg white coating on the nuts bakes, the nuts develop a fabulously tasty sugar-and-spice flaky coating that's oh-soooooo good.
Let the nuts cool to room temperature, and then serve up a bowl and enjoy!

- 1 T. vanilla extract
- 1 egg white
- 3 c. nuts (I use 1 c. each whole almonds, pecan halves, & whole cashews)
- 1/4 c. granulated sugar
- 3/4 tsp. kosher salt
- 3/4 tsp. ground cinnamon
- 3/4 tsp. ground allspice
- 1/4 tsp. ground cardamom

How to make Chai-Spiced Mixed Nuts
- Combine vanilla extract and egg white in a large bowl; stir with a whisk until foamy. Stir in nuts, being sure to get all nuts coated with egg white.
- In a small bowl, combine sugar, kosher salt, cinnamon, allspice, and cardamom. Sprinkle over nuts, tossing to coat.
- Place nut mixture on a baking sheet lined with parchment paper or foil. Bake at 325 degrees for 15 minutes.
- Remove pan from oven. Turn off oven.
- Toss nuts, breaking pieces apart. Return pan to oven, and leave pan in oven for an additional 10 minutes (with the oven turned off).
- Cool to room temperature. Store nuts in an airtight container at room temperature for up to a week.
