I have a bit of an obsession with granola ... like these chai, mocha, peanut butter, and honey-vanilla varieties. I just love to snack on its crunchiness.
But you know, sometimes you want a soft-and-chewy granola treat. A chocolatey peanut buttery soft-and-chewy granola treat. Like these Peanut Butter Chocolate Chip Granola Bites.
Or, as I like to call them, "less-guilt silencer of the sweet tooth" balls.
Loaded with peanut butter, chocolate chips, oats, and honey, these pack a ton of flavor. Oh, yes ... these little granola bites sure hit the spot.
I discovered these tasty little treats over at Smashed Peas and Carrots, and just had to give them a try. I mean, with my love of granola ... and chocolate ... and honey ... it was pretty much a given, right?
And I love that they're chock full of good stuff like whole-grain oats, wheat germ, flax seed, and no refined sugar. Which means they're a snack I can feel good about.
They're easy to make, too.
All you do is mix this good stuff together with some peanut butter, honey, and mini chocolate chips ... then roll the mixture into bite-sized balls. {Now, I will admit ... the rolling into balls is a bit more tedious than I'd like ... but the result is worth it.}

ingredients:
- 1 c. old-fashioned oats
- 1/2 c. peanut butter
- 1/3 c. honey
- 1 c. coconut
- 1/4 c. ground flax seed
- 1/4 c. wheat germ
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/2 c. mini chocolate chips
instructions:
How to cook Peanut Butter Chocolate Chip Granola Bites
- Combine all ingredients in a large mixing bowl; mix well.
- Refrigerate mixture for about 30 minutes.
- Once chilled, roll mixture into approximately 1-inch balls, using about a tablespoon of the mixture for each ball. Store in the refrigerator for up to about 1 week.
