I first saw this concept on Pinterest a couple of months ago. Since then I haven’t been able to get the image of a baked egg in an avocado boat out of my mind.
Are you big fan of Pinterest? I certainly am. It’s like the greatest place ever on the internet to find inspiration. Although it’s undeniably ruled by women.
According to my friend Denise, girls like Pinterest because they’re so desperate to get away from Facebook.
She says that for girls Facebook isn’t so much of a social network, it’s more of a tool you use to show how much further ahead in life than your friends.
Such as posting when you get a new job, complaining about how stressed you are about your job, taking pictures of your engagement ring, showing that your lunch consists of only 2 lettuce leaves and a dry tomato, posting pictures your mom took of you giving birth (which I’ve just found out you’re not supposed to comment, ever) and posting 400 pictures of that one time you went out in the last four months.
Not the guys are any better; the only reason we use Facebook is to repost things we’ve found on Reddit so that we can look witty, smart and generally badass. Or ranting about sports/politics.
That’s pretty much it.

ut Pinterest is different. On Pinterest you get to design your own dream apt (which it is basically a copy from Anthropologie), you get to pin things you can’t afford (Maserati anyone?) and repin tons of cool stuff (such as pictures of food, books, fashion, etc.)
Personally I like to randomly browse on Pinterest.
Jumping from one pin to another, ending up on boards of people that live on the other side of the world.
Often - out of nowhere - something super awesome comes up on Pinterest.
I’m like, wait, WHAT? This is freaking genius. I so have to make this.
Like the eggs baked in avocado boats.
A two ingredient recipe; it really doesn’t get any simpler.
This is perfect for breakfast, like really perfect.
You can top it with all things you love, such chopped scallions, crispy bacon, or Sriracha.
Yeah, you should definitely slather it with Sriracha...then we can talk.

Ingredients
Serves 2

1 avocado
2 free-range organic eggs
Ground black pepper
Fine grain sea salt
Chopped parsley to taste

Directions

Preheat the oven to 425 degrees.
Halve the avocado and scoop out enough meat to fit the raw egg, but leave as much as possible.
Using two bowls, separate the egg yolk from the whites.
Place the avocado halves on two ramekins, they hold them stable and make them easy to bake.
Fill the avocado halves with the yolk first, then add the right amount of the white to prevent it from overflowing.
Sprinkle with a pinch of salt and pepper, then bake for 15 minutes or 20 minutes if you don't want a runny yolk.
Sprinkle with chopped parsley and serve!

Nutrition facts

One avocado half yields 231 calories, 20 grams of fat, 10 grams of carbs and 8 grams of protein.
