Muffin Mix Pancakes {aka: Pancakes-In-a-Pinch}

Because I recently discovered -- quite by mistake ... or perhaps by desperation -- that Martha White® muffin mixes make delicious pancakes.
See, I had planned to make pancakes for dinner one night a week or so ago, and my 5-year-old daughter was very much looking forward to them. Pancakes are her favorite.
So she and I, as we so often do, set out making dinner together. We grabbed the canister of our homemade pancake mix out of the refrigerator, mixed up the batter, and proceeded to cook up our first pan of pancakes.
Only something didn't seem to be going right ...
and starting to get a little bubbly on top ... as pancakes do as they cook, ... this batter just sort of seemed to sit there. Pretty much doing nothing.
As the edges started to look set and a bit dry, I flipped the pancakes, thinking they must certainly be ready for flipping, right? And sure, they were browned on the first side -- but it still looked like something was rather amiss.
Once the first pancakes (and I use that term very loosely) were done cooking, I tore off a piece to taste. And guess what? It tasted horrible!
I recently discovered -- quite by mistake ... or perhaps by desperation -- that Martha White® muffin mixes make delicious pancakes.
Finally, prompted by the terrible tasting mess in my mouth, I glanced back at the pancake mix canister. Can you guess what I discovered? The canister wasn't pancake mix at all ... I had grabbed the canister of whole wheat flour instead!
I rummaged through the refrigerator, desperately searching for the canister of pancake mix instead, only to find out the pancake mix canister wasn't there. I had used it all up, and completely forgotten to make more.
And so as I discovered I was out of pancake mix ... I also discovered that I had one very disappointed little girl on my hands.
Thinking quickly, I went to the pantry and grabbed a package of Martha White® Blueberry Muffin mix. I wasn't sure if it would work to make pancakes or not ... but with my very disappointed little 5-year-old, I was sure going to give it a try.
The extra beauty of this quick little pancake method?
With all the varieties of Martha White® muffin mixes available, you can easily mix up a batch of pancakes in almost any flavor. My daughter's and my favorite are chocolate chip, while my husband is quite partial to banana nut.
I'm sure thankful for the convenience and homemade taste of Martha White® muffin mixes as they pulled me out of my pancake pinch!
And thankful for the discovery of how to easily make wonderfully delicious flavored pancakes in a seemingly endless variety of flavors -- even if I did make the discovery quite by mistake.

Muffin Mix Pancakes
With Muffin Mix Pancakes, easily mix up a batch of pancakes in almost any flavor with a little secret shortcut packaged muffin mix!

ingredients:
- 1 (7 to 7.6 oz.) package Martha White® muffin mix {any flavor}
- 1/3 c. + 1 T. milk
instructions:
How to cook Muffin Mix Pancakes
- Place dry muffin mix in a small mixing bowl. Add milk; stir with a fork until well combined.
- Pre-heat pan over medium heat. Add a small amount of canola or vegetable oil (about 2 teaspoons to 1 tablespoon) and spread to coat bottom of pan.
- Once pan and oil are hot, spoon batter into pan to form 3 to 4-inch diameter circles. Cook until edges appear set and a little dry; flip with a spatula and continue cooking until cooked through. {Usually when cooking pancakes, bubbles rising up through the batter are a sign it's time to flip them. Those usual bubbles don't seem to appear with this Muffin Mix Pancakes method ... hence, go more by the look of the edges when deciding when to flip.}
- Repeat with any remaining batter.
- Serve with maple syrup, butter, jam, or other flavored syrup as desired.
