I just adore reading cookbooks. Probably no shocker there, right? And I love reading any kind of cookbook. I swear, I'm drawn to them like a moth to light.
Doesn't matter that I have an entire bookshelf full. Nope. I won't hesitate at all to buy a new one that catches my eye.
But I have an extra-special love for local cookbooks compiled, with love, by church or women's groups {or any type group, for that matter}. And one such cookbook just so happens to be where I came across the recipe for this totally scrumptious {and easy} No-Bake Chocolate Chip Cookie Pie.

You know, some people buy t-shirts ... or snow globes ... or magnets ... or any variety of things as souvenirs when they go on a trip or visit a new place. Not me.
Can you guess what kind of souvenir I buy?
A cookbook.
Yes, if I purchase a souvenir from a trip, it tends to be a local cookbook put together by a local church ... or women's club ... or restaurant ... or inn ... or fundraising group. Whatever I find that reflects the cooking style of that place.
Now this recipe isn't from a cookbook from some exotic location. This one is from a fundraising groups' cookbook from right here in my backyard Carolina Blessings: Recipes from Friends of the Children's Home Society of North Carolina. And it's one of my favorites. {Both the cookbook and the recipe, that is.}
Though I have to admit when I first read the recipe, I was skeptical.
Because all you do to make this no-bake pie is dip store-bought original Chips Ahoy! cookies in milk and layer them in a prepared graham cracker crust with some Cool Whip. And I thought ... really? That works??

Quite wonderfully, in fact. And it's even easier than ... well, pie.
No crust mixing. No crust rolling. No baking. It's like magic how easily this cookie pie comes together. So easy, in fact, it's a great starter recipe for getting kids cooking in the kitchen. Kids can totally make this recipe on their own.

... and lay them in a single layer in a prepared graham cracker crust. {Easy so far, right? Well, believe me, it stays this easy.}
Keep going with the cookie-milk thing until the bottom of the pie is covered.
Spread on Cool Whip ...
... and repeat. Twice. {Still easy.}

No-Bake Chocolate Chip Cookie Pie
Four simple ingredients come together to create one delicious No-Bake Chocolate Chip Cookie Pie. And you won't believe how easy ... and good ... it is!
prep time: 20 Mcook time: total time: 20 M
ingredients:
- 1 (13 oz.) package chocolate chip cookies (original crunchy, not soft & chewy) I use Chips Ahoy!
- 1 (9 oz.) prepared graham cracker pie crust
- 1 c. milk
- 1 (8 oz.) container Cool Whip
instructions:
How to cook No-Bake Chocolate Chip Cookie Pie
- Set aside 2 chocolate chip cookies to crumble on top of the pie.
- Place milk in a measuring cup. Dunk 8 cookies, one at a time, in the milk and place in a single layer in the bottom of the graham cracker crust. (Dunk each cookie quickly or it will absorb too much milk and crumble apart on you.) Spread 1/3 of the Cool Whip evenly over the cookies.
- Dip 10 or 11 cookies, one at a time, in the milk and place in a single layer over the Cool Whip layer. Spread 1/3 of the Cool Whip evenly over the cookies. Repeat to create one more layer of cookies and one more layer of Cool Whip.
- Crumble the reserved 2 cookies and sprinkle on top of the pie. Cover and chill for at least 8 hours before serving.
