I'm so excited next week is Easter! One reason being that Easter means Easter dinner. And Easter dinner means ham.
And ham for dinner means a leftover ham bone.
Do you want to know what a leftover ham bone means in our family? It means a big pot of Mom's world-famous Slow Cooker Ham & Kidney Bean Soup!
Slow Cooker Ham & Kidney Bean Soup truly couldn't be any easier to make. It's literally a dump-and-cook kind of recipe anyone can handle.
Okay, okay ... so maybe Mom's Slow Cooker Ham & Kidney Bean Soup isn't world famous. But it sure should be! It's my absolute favorite of Mom's soups.
Growing up, I always looked forward to Mom making a big pot of Ham & Kidney Bean Soup after Easter with our leftover ham bone. There's just something about the combination of the smokey ham, tender slow-cooked vegetables, and kidney beans that is oh-so-good.
As an extra bonus? This should-be-world-famous Slow Cooker Ham & Kidney Bean Soup truly couldn't be any easier to make. It's literally a dump-and-cook kind of recipe anyone can handle.
To whip up a crock pot full of this tasty soup, simply toss a leftover ham bone in the slow cooker.
Add some vegetable broth, canned dark red kidney beans, and a bunch of chopped carrots, celery, onions, and potatoes.
Then let the slow cooker do its thing.
On the HIGH setting, the soup needs to cook for about 4 to 6 hours. Or, cook on the LOW setting for about 6 to 8 hours.
While the soup cooks, the ham that remains on the ham bone will become ultra-tender and essentially fall off the bone, wonderfully flavoring and adding chunks of meat to the soup.
