It's strawberry season!!! And I couldn't be happier!!
Yes, simple things in life make me happy ... and in-season, fresh-picked strawberries are indeed one of those simple things that make me very happy. I am blessed to live literally less than a 5 minute drive away from three {three!} local strawberry farms.
And have I already been to pick up a pint or two of fresh-picked berries this season? ... Well, yes, yes I have.
Just like classic banana pudding, but with strawberries instead. It's banana pudding's {totally scrumptious} strawberry cousin!
A few of those beautiful berries may have just found their way into this totally scrumptious, totally drool-worthy Strawberry Pudding.

Strawberry PuddingSource: Adapted from The Covered Dish, recipes from Good Hope United Methodist Church, Lexington, NCIngredients- 4 c. sliced fresh strawberries (about 1 to 1 1/2 quarts)
- 1 (3 oz.) package strawberry Jell-o {sugar-free works just fine, too}
- 2 (3.4 oz.) packages instant vanilla pudding {sugar-free works just fine}
- 3 c. milk
- 1 c. sour cream
- 1 (11 oz.) box vanilla wafers
- 1 (8 oz.) container non-dairy whipped topping, divided {or 3 c. homemade whipped cream}
Directions- Place strawberries in a saucepan and sprinkle with dry Jell-o powder; stir gently to evenly coat berries. Heat over medium-low heat just until Jell-o is dissolved. Set aside to cool.
- In a mixing bowl, beat together milk, sour cream, and dry instant vanilla pudding powder until well combined. Fold in half of the whipped topping.
- In a trifle bowl or glass bowl, make layers in this order: vanilla wafers, half of the pudding mixture, and half of the strawberry mixture. Repeat layers once more. Top with remaining whipped topping. Crumble four or five vanilla wafers on top of whipped topping.
- Cover and chill overnight.
- At serving time, garnish with additional whole and/or sliced strawberries, if desired.
